C\u2019est l\u2019ingr\u00e9dient invisible qui transforme une cuisse de porc en une excellence reconnue dans le monde entier : le <strong>Prosciutto San Daniele.<\/strong><br>Tout comme dans le travail artisanal que nous perp\u00e9tuons depuis plus d\u2019un si\u00e8cle, chaque d\u00e9tail compte.<br>Mais l\u2019ingr\u00e9dient le plus important a toujours \u00e9t\u00e9 le<strong> microclimat de San Daniele<\/strong>. Il est unique car il na\u00eet de la rencontre de deux vents : l\u2019air frais qui descend des <strong>Alpes frioulanes <\/strong>et la brise douce qui remonte de la<strong> mer M\u00e9diterran\u00e9e<\/strong>. \u00c0 cet \u00e9quilibre naturel s\u2019ajoute le <strong>fleuve Tagliamento<\/strong>, qui coule au pied de la colline et r\u00e9gule l\u2019humidit\u00e9 pendant l\u2019affinage.<br>Cette combinaison, unique et certifi\u00e9e par une <strong>DOP europ\u00e9enne<\/strong>, fait du Prosciutto San Daniele un produit qu\u2019aucun autre lieu au monde ne pourrait cr\u00e9er.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-publifarm-column col-12 col-md-12 col-lg-3\"><\/div>\n<\/div><\/div><\/section>\n\n\n\n<section class=\"wp-block-publifarm-columns py-2 py-lg-4\" id=\"cap-2\"><div class=\"container\"><div class=\"row\">\n<div class=\"wp-block-publifarm-column col-12 col-md-12 col-lg-6\">\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Notre atelier: 250 m\u00e8tres d\u2019altitude, au c\u0153ur de la tradition<\/strong><br><br><\/h2>\n\n\n\n<p>Nous nous trouvons \u00e0 <strong>250 m\u00e8tres au-dessus du niveau de la mer, au sommet de la colline de San Daniele<\/strong>, en plein centre historique. Une position inchang\u00e9e au fil du temps, qui nous offre une ventilation naturelle et constante: ce m\u00eame air qui, depuis toujours, d\u00e9finit le caract\u00e8re de notre jambon.<br>Lorsque les conditions climatiques le permettent, <strong>nous laissons les fen\u00eatres du s\u00e9choir ouvertes<\/strong>: les jambons respirent l\u2019air de San Daniele, se laissent bercer par les vents et avancent lentement sur leur chemin d\u2019affinage.<br>Nous acc\u00e9l\u00e9rons pas. Nous ne for\u00e7ons rien. C\u2019est pourquoi nous collaborons <strong>exclusivement avec des fournisseurs locaux<\/strong>, en s\u00e9lectionnant des <strong>porcs provenant du Frioul-V\u00e9n\u00e9tie Julienne.<\/strong> Un choix \u00e9thique et qualitatif qui fait de notre Prosciutto San Daniele non seulement un produit, mais aussi un engagement concret en faveur de la <strong>durabilit\u00e9 et du respect de
