In San Daniele del Friuli, air has never been just air. It is the invisible ingredient that transforms a pork leg into a world-renowned excellence: the Prosciutto San Daniele.
Just like the artisanal process we have carefully preserved for over a century, every detail matters. The most important ingredient has always been San Daniele’s microclimate. It is truly unique, created by the meeting of two winds: the cool air descending from the Friulian Alps and the mild breeze rising from the Mediterranean Sea. To complete this natural balance is the Tagliamento River, flowing at the foot of the hill and regulating humidity during the aging process.
This unique combination, protected by a European DOP certification, makes Prosciutto San Daniele something no other place in the world could ever create.

Our Prosciutto House: 250 Meters Above Sea Level, at the Heart of Tradition

We are located 250 meters above sea level, at the top of San Daniele’s hill, in the very heart of the historic center. A position unchanged over time, granting us natural and constant ventilation, this air has always shaped the character and flavour of our ham.
Whenever climate conditions allow it, we leave the windows of our aging rooms open: the Prosciutto breathe the San Daniele air, are gently cuddled by the winds, and slowly follow their natural aging journey.
We do not rush. We do not force. We follow nature’s rhythm.

Before nature completes its work, there is us: skilled hands, gestures passed down through generations, and knowledge refined over more than a century.
Every day, we prepare the prosciuttos of tomorrow, guiding them through a 24 month aging process, only this way they can become timeless excellences.
Crafting an artisanal Prosciutto San Daniele is not only about salting or aging. It means listening, observing, interpreting. Each one tells a story about time, air, and sea salt, and hands that know every stage of the process.

Short Supply Chain: Pride of the Friulian Territory

Enhancing our territory means carefully selecting raw materials. For this reason, we work exclusively with local suppliers, choosing pigs sourced from Friuli Venezia Giulia only. An ethical and quality-driven choice that makes our Prosciutto San Daniele not just a product, but a tangible commitment to sustainability and environmental respect.
